Spiff, The Chefman

This post is actually something more suited for Nessa's 'Recipes I luv' blog rather than in my macho spaceman blog but I can't resist posting this. Yes, I'm going to post a recipe for a dish I cooked up today in conjunction with my new diet regime :D

I've been on this diet for close to 5 days now and have even managed to remain rice free for the same amount of time. For me, that is an incredible feat seeing as how I happen to love eating mountainfuls of rice everytime I have dinner.

Today I cooked up something that I saw from one of those AFC shows on Astro. It was a dish prepared by Gordon Ramsay and I thought it looked pretty simple to do. So this evening I told Mrs. Spiff I was going to whip up something special for my dinner. She just nodded her head and went 'uh-huh' and carried on doing what she was doing.

But curiosity got the better of her while I preparing the stuff and she was kinda surprised that I was actually cooking something that looked and smelled good :D And she even suggested a few things to make my dish even better. Here is the picture of the finished product of my dish just before it was all swallowed down ... LOL!



Trust me, it looked much more awesome than the picture and the smell, I can't even begin to describe the smell. The moment I put it on the table, my younger boy came running over, Pebbles came dashing by and Mrs. Spiff also came over to sample some of it with a great big thumbs up :D:D:D

The best part was I made it all on my own. It may not have been exactly as Gordon Ramsay would have done it but I think he would have used much lesser swear words on me ... LOL! Ok, here's the recipe but be forewarned that it's all by my own personal measurements so don't sue me if you try it and get it wrong.

First of you need:
Chicken breast meat (portions up to your greediness ... LOL!)
Some salad type of leaf (don't ask me what it was cos I have no idea)
Some onions (again up to your preference on how many you want)
And garlic, loads of it (I just love garlic in all my food)
One tomato

The prep:
Slice the chicken breast in half, marinate with whatever suits your fancy. Mine was marinated in garlic teriyaki (did I mention I love garlic?) sauce, a pinch or two of salt and a dash of pepper powder. Leaving it to marinate overnight would have been awesome but since I was hungry, I left it to marinate for about 15 minutes.

While you wait for it to marinate, slice the onions into rings (preferably), smash and peel the garlic and also slice the tomato into 3-4 round slices. Next heat up a non stick pan, dab a little oil and sear the marinated chicken breast lined up with all the onions, garlic and tomato slices. You'll want to do this at the same time so they all soak up each others flavors. Remember to keep the heat to a medium and make sure the garlic, onions and tomatoes are seared just nice.You'll know when the moment you start seeing that urrmmm, little burnt marks here and there.

While waiting for all this to be ready, line up the plate with that unnamed salad leaf and sprinkle the salad leaf with that by now aromatic seared garlic, onion and tomatoes. Then finally top it off with that mouth watering chicken meat :D And this is where Mrs. Spiff suggested some gravy which I didn't have and instead used a Prego Alfredo Portobello spaghetti sauce which worked just as great. I have to thank Mrs. Spiff for that brainwave :D

There you have it, a dish that would have cost you quite a bit outside which took me only 30 minutes to make and it tasted oh so yummy ... hehehe ... and not to mention utterly healthy as it was done with practically no oil except for the tiny drop I used as a thin coating for the pan. I really gotta watch more of that AFC channel and especially good old filthy mouth Gordon Ramsay cos he does come up with some mighty fine dishes.

I wonder what else I can cook up for tomorrow?
